The Story
Sottoriva is a unique prosecco. Made in the nearly lost method of spontaneous re-fermentation, the colour of the wine is unusually cloudy. But still, this prosecco is distinctively Italian: light, dry and crisp. We’d recommend allowing it to settle in the bottle upright for an hour before popping the cap. And remember prosecco (or any really good sparkling wine) is always better in a wine glass rather than a flute: it allows more room for the Prosecco to breathe and allows you to get a good whiff.
