The Story
Based off a cocktail called Piña y Piña on the menu at ROVI, this is a slightly smokey, more flavourful, and fruitier take on the classic cocktail, ‘Tommy’s Margarita’. At ROVI, whole pineapples are roasted directly on the coals until completely blackened. The pineapple is then allowed to cool, the skin is removed, and it's diced into small pieces. These are then infused with a 50:50 ratio of Ocho Blanco tequila and QuiQuiRiQui mezcal. We strain the pieces of pineapple out and mix with agave, water and citric blend (a concentrated blend of acids commonly found in citrus fruits).
Best served with a rim of Tajin (a Mexican chilli lime salt) or Ottolenghi chilli salt.
Sediment may appear naturally, and any separation is completely normal.
SERVING INSTRUCTIONS - Pour 100ml over ice in a rocks glass rimmed with tajin. Chill and shake gently before serving. Serves 5.
