Large Christmas Cake

Our Christmas cake begins in the summer. Sultanas, currants, raisins, dates, dried pineapple, apricots, prunes and glacé cherries soak for months in brandy and rum, slowly absorbing every drop of warmth and depth. The result is a cake that tastes like Christmas in every bite.
