We've found a new panettone maker this year – Pasticceria Scarpato in Italy. After tasting 25 different panettone from 8 suppliers, they came out on top. The dough is incredibly light and airy, almost cloud-like – exactly what classic panettone should be.
The traditional recipe is done perfectly here, packed with raisins and candied fruit, and with that signature airy texture that makes all the difference. It's wonderful with coffee or sweet wine, or turned into the most luxurious French toast for Christmas morning.
